The island origin is not at all obvious from the nose, which shows immediate honey and the sweet smell of steamed rice left in the refrigerator for a week. It could easily be mistaken for the nose of a sturdy Highlander. Palate shows moderate smoke, with a sour finish. The addition of water helps this malt immensely, and brings out ripe plum in both the nose and palate. The palate also develops hints of artificial grape flavoring. Missing levels of flavor that I would expect from a Highland Park.
